
General Manager Steve Hermiz brings nearly two decades of experience at Cameron Mitchell Restaurants to Big Rock Italian Chophouse. Originally from Roseville, Michigan, Steve began as a server assistant at Ocean Prime Troy, eventually opening Ocean Prime locations in New York City and Las Vegas. Steve returned to Michigan specifically to lead Big Rock, overseeing operations and the property’s exclusive cigar club. His career highlights include significant roles in successful restaurant openings, including the acclaimed Ocean Prime locations in major markets like New York and Las Vegas. Steve has a passion for hospitality, enjoys cigars, and takes pride in creating exceptional guest experiences. He views hospitality as a daily opportunity to transform a guest’s day and create memorable moments.

Executive Chef Chris Mayer leads the culinary team at Big Rock Italian Chophouse, bringing over 20 years of experience. Starting his career at 15, Chris joined Cameron Mitchell Restaurants in 2005. At Ocean Prime Troy, he quickly advanced from line cook to executive chef. At Big Rock, he oversees an innovative menu featuring premium steaks, chops, fresh pastas, and Italian-inspired dishes. He takes pride in mentoring younger chefs and building strong kitchen teams that deliver consistent, high-quality results. Outside the kitchen, Chris enjoys spending time outdoors hunting, fishing, and boating with his wife and daughter.
